This delicious dessert tastes like a light lemon cheesecake, in ice cream form!
Soften cream cheese in microwave on medium-low power (it takes about 3-5 minutes in mine). Mix sugar and vanilla into cream. Blend cream cheese with half-and-half in blender until smooth, and add to cream mixture. Stir in lemon juice and zest. Process in your ice cream freezer, adding crushed up graham crackers during the last few minutes.
Freeze according to your freezer's directions.
